Since 1917, the PARADIS family has been based at the Domaine de Portal mill in Martignargues, historically used to grind wheat and crush olives to extract oil.
Situated in the heart of the countryside, this 16th-century mill (1540) stands on a hillside bordered by the Droude river, which until 1998 powered the old millstone and olive press.
Built of dry stone, it is flanked by a listed dovecote and a traditional bread oven.
In 1950, Auguste Paradis relaunched the olive-growing activity by modernizing the installations, thus facilitating oil extraction and the hard work of the miller.
In 1977, his son Roger increased production by planting olive trees, enabling the Moulin to grow and acquire a certain notoriety in the industry for the quality of its olive oils.
With olive production increasing over the years, Christophe, 4th generation miller in the PARADIS family, decided to set up a second facility between Uzès and the Pont du Gard in the commune of Saint-Maximin in 2011.
